Betty's Chorizo A La Sidra (Chorizo cooked in cider) recipe

We had the pleasure of filming Betty cook 3 wonderful Spanish Tapas dishes. One of them being Chorizo La Sidra.




Betty described Tapas as a social affair and an evolution of all the Spanish foods combined. Its a sharing meal she would have in combination with a few drinks with friends in the Spanish capital of Madrid.



Chorizo la sidra is one of Betty’s favourite dishes it’s a popular tapas dish served all over Spain it is easy to cook and requires very little ingredients. It’s a summer dish and it’s a combination of sharp, tangy flavours that you get from the cured meat of chorizo and sweet summery flavours that you get from cider this dish is incredibly tasty!! Lets cook it!

Chorizo La Sidra


Course: Appetizer Cuisine: Spanish Prep Time: 5 Minutes

Cooking Time: 20 Minutes Servings: 6 people


Betty cooked a classic yet a well-known authentic dish from Asturias the Northwest region of spain known as chorizo la sidra. Its simply cured meat cooked in apple cider.


Ingredients

500 grams Chorizo

400 ml Magners Cider


Method

1. Cut chorizo into 2cm circular small rings


2. Place pot on low heat


3. Once pot gets hot add chorizo and stir the pot for 5-8 minutes

(Usually in Spain they would drizzle olive oil into the pot before adding chorizo, however Betty does otherwise she states that because the chorizo contains fat there is no need for oil).


4. Once the chorizo starts to brown she then adds 400 ML of Magners Cider


5. Lower the heat slightly and lets the cider reduce for 15 to 20 minutes.


6. Once the chorizo has softened and the cider reduction has thickened and changed color to bright red you can take it off the heat


7. A very simple dish with very little ingredients it is ready to be served. With cider of course
