Eman's Seafood Linguine Recipe

On Episode 9 of This Food Bangz, we met Eman and he whipped us up this BANGIN seafood linguine! I gotta admit when Eman told us he was going to make pasta, Eli and I did a double take. But no word of a lie, this food bangz—and you better believe we’re here to tell you if it doesn’t!

Even more of a head-scratcher was the fact that Eman made this creamy dish with no dairy products! We here at This Food Bangz are naturally skeptical of vegan cheese (read vegan everything) for obvious reasons. That being said, Eman used vegan eggs, butter AND CHEESE to create a linguine that held together quite nicely. Prawns, mussels, cherry tomatoes, diced courgette and parsley made for a dish with vibrant colour and flavours. We gotta give it to him. Give this one a go, and let us know how you get on!



Ingredients:

1 courgette (2 if you're cooking for 4 or more)

2 cloves garlic

prawns

mussels

linguine

1 egg beaten (or egg substitute)

1 package piccolo tomatoes

1 table spoon olive oil

1 small green or red chili

1 lime

2 table spoons butter (or non-dairy alternative)

parmesan cheese (or vegan alternative)

parsley

Italian herb and seasoning mix

smoked paprika


Method:

Dice the courgette and fry in olive oil in deep pan with two cloves of garlic. Once the courgette begins to brown, add in the seafood, chopped chili pepper and the juice of one lime. While that's cooking, put your pasta on to boil. Make sure you salt the pasta water and a little oil (and you can even add a little extra something something to season the water and flavor the pasta if you like). Next, cut your tomatoes in half and add to the mix when the seafood is cooked. Turn off the burner and let the heat from the pan do the rest of the work. You don't want to over cook the tomatoes. You want them to stay nice and plump and keep their bite. Then, drain your pasta, but be sure to reserve a bit of the pasta water to make a sauce. Add the linguine and reserved pasta water into your deep pan with all the ingredients. Now is the time to throw in the beaten egg, Italian herb and seasoning, along with some salt and pepper, a generous helping of butter, the parmesan cheese, and chopped parsley. Give it a mix. Plate up and sprinkle with smoked paprika and an extra helping of cheese and parsley!
